Here is a fun twist on an old standard: Over the weekend I decided to try my own riff on the Pineapple Upside Down Cake cocktail. 🍒
I made my own vanilla vodka by splitting a vanilla bean and throwing it into bottle of vodka for two days. I made “boozy cherries” by cooking down fresh cherries in sugar and bourbon, and used the remaining juice in the pan to create a delicious cherry molasses. I added some depth with smoked pineapple juice, and poached a few fresh pieces in rum for the garnish. For extra flavor, I added an orange and thyme simple syrup. Delish!
Recipe:
1.5 oz Vanilla Vodka
2 oz Smoked Pineapple Juice
Drop of Rum Cherry molasses
3/4 oz Orange & Thyme simple syrup
Shake it all together with ice and pour into a glass with fresh ice. Garnish with pineapple and cherries.
