Nothing beats really cold sparkling wine on a hot day. I went for this bottle of 2014 @pereventuracava Brut Vintage Cava because I wanted something interesting to sip on that was also refreshing. Since this was a vintage sparkling wine, all the grapes were harvested that year. It also meant the winemaker saw a reason to highlight this particular year, so I knew I was about to taste something pretty special.
Cava sparkling wines are made in the same method as Champagne but some of the grapes are different. This sparkler is from Catalonia, Spain. It’s a blend of the Xarel-Lo and Chardonnay and was aged 43 months on its lees. During this stage of maturation, dead yeast cells break down in the wines and create secondary flavors such as hazelnut, toast, bread and brioche. It adds a layer of complexity that is admired every time you go back to the glass.
This Cava was silky, elegant and had an incredible body. The persistent bubbles carried notes of baked yellow apple, apricot, nougat, anise and quince on the finish. This would be perfect with charcuterie, lobster and shellfish dishes.
